Mushroom Cake

 

  • 125g butter
  • 3/4 cup castor sugar
  • a few drops vanilla essence
  • 1/2 cup walnuts, chopped
  • 1/2 cup honey
  • 1/2 cup milk
  • 400g fresh Mushrooms, finely chopped
  • 2 eggs, lightly beaten
  • 2 cups self raising flour, sifted

 

1Pre-heat oven to 180°C.

2Lightly grease a medium sized baking tin.

3Cream butter and sugar until light and fluffy, then add vanilla.

4Add eggs slowly, beating well. Add flour alternately with milk, finishing with flour.

5Sprinkle in Mushrooms, walnuts and honey, combining thoroughly.

6Spread into prepared tin. Bake on centre shelf of oven at 180°C for approximately 35 minutes.

7Allow cake to cool then sprinkle with icing sugar. (you may add some cinnamon to the icing sugar if you wish)
